The original old recipe from "the shop of the late Tom Smith" is a condiment which takes no prisoners, so I have diluted the original recipe with coarse sea salt as per an 18th century recipe for "kitchen pepper".
Traditionally used for flavouring stews or reheated "made-up" meat dishes, it makes a delicious rub for chicken or kebabs before cooking or sprinkled over vegetables before serving.
