Dijon mustard was originally created by Jean Naigeon in Dijon in 1856. Traditionally the majority of people made mustard from mustard seeds and vinegar, but Naigeon used verjuice in his recipe which is a sour liquid made from unripe grapes making the mustard smoother and more paletable.
