Lemon Cheese is a traditional British recipe for a classic preserve made from eggs, lemon juice and zest that's cooked until it solidifies.

Grease and line a small loaf tin (1lb. tin). Cream together the margarine and then gradually beat in the eggs. Mix in the lemon cheese thoroughly and fold in the flour. Spoon into the loaf tin and cook until golden brown. Cooking Temperature: 325 degrees Fahrenheit, 160 degrees Celsius, or fan oven 150 degrees Celsius. Cooking time approx. 1 hour.
